Ingredients :
*2 small eggplants
*Half medium onion or two small onions well chopped
*Salt as your wish
*2 medium garlic cloves well chopped
*Vegetable oil
*1/4 tea spoon of cumin
*Half tea spoon of coriander
*Sweet parika to give a beautiful and hot orange colour to your vegetarian filet in an amount enought to give the appetizing orange wished colour and not get too strong
*Soy sauce called shoyu ( get a brand which doesnt use caramel coloring , as the brand Daimaru , found in Japanese/Chinese store) in a reasonable amount enought to darken the eggplant
Way of to Do:
*Cut the eggplants by half , and after , in medium stripes in vertical direction. After , cut each piece by half in vertical direction
*Pour the stripes in a cauldron with water in an amount enough to cover them and boil them.
*When they got boiled for 10 minutes , turn off the oven and pour in a sieve to drain the water.
*So, add in a medium pan the vegetable oil , onion , garlic and salt. Mix them until the onion gets transparent.
*Add the cuumin and coriander and mix well to incorporate them in the previous ingredients
*Pour the eggpplant stripes and mix with the other ingredients
*So, add the shoyu to make it get a darker colour and togheter with the sweet paprika , cause the shoyu has not the caramel coloring which gives a orange colour
*Mix the eggplant stripes to penetrate the shoyu and the paprika in them
*After, turn opff the oven flame and pour it in a beuatiful bowl you like and sreve. Your vegetarian filet mignon is ready. Enjoy !!
