The original recipe fries the eggplant in oil,but it doesnt get with a beautiful appearance,looking like dry woods and loses the beautiful yellow of the turmeric,besides of to be not healthy.Instead,I adapted the recipe to airfrier.
Ingredients:
*500 g of eggplant cut into thick strips
*1/2 teaspoon of turmeric powder
*250g of onions (it can be purple,to get more beautiful)
*100 g of medium size green,yellow,red and purple peppers,to be more colorful
*1 tablespoon of ginger
*2 garlic well chopped (2-3 garlic cloves and 1/2 inch ginger piece)
*1 tablespoon chilli powder
*1 and 1/2 tablespoon mustard powder
*2 tablespoons of sugar or sweetner
*1/3 of vinegar cup
*Salt to season
*Entire mushrooms (I put whole the pot)
*1 tea spoon of turmeric powder
Way of To Do:
*Cut the eggplant by half in vertical direction , and cut in medium width slices in horizontal to make a half moon shape
*Put the eggplant in a vessel with salt and a bit of water, to make them soft , without need to boil them in water, to not get them too much soft
*Apply vegetable oil and put it in the air frier for 10 minutes , under a temperature of 180ยบ
*Put the onions,ginger garlic paste in a pan with oil and gild
*Put mustard,salt,sugar/sweetner and the vinegar to do the sauce
*Put the eggplant in the pan and mix with the sauce
*Turn off the pan
*Add the turmeric and mix
*Add the chilli pepper powder
*Add the mushrooms and the raw big peppers
*Put in a bowl and put the mushrooms slices to finish
Is ready your Sri Lankan Eggplant !!
