Ingredients :
*1 medium eggplant
*2 garlic cloves
*Half well chopped onion
*2 medium garlic cloves
*1 pinch of salt
*Half grated carrot
*Half grated beetroot
*Vegetable oil
*1 silicone brush
Way of To Do:
*Put the eggplant directly at the oven flame and turn it towards all the directions , but not let it be cooked so much , cause if it happens , the sausage gets too much soft , making impossible in becoming a steady sausage
*When it is ready , turn of the oven and put the eggplant in a plate and cut it by half in horizontal direction and grasp it trought a fork to take out the peel . Knead it with a fork and let it cool.
*Add the onion , garlic and mix
*Add the beetroot , carrot and mix again to dye the eggplant of red , being very similar to a Calabrese sausage
*Shape the dough to make the sausage and swab it with a silicone brush with vegetable oil
*Put it carefully in an air frier uunder a temperature of 180°C
*When the time arrives , turn off the machine and put it in a beautiful plate , be to eat in your lunch , in a bread , pizza or any recipe you eat. Your Calabrese sausage is ready.
